Abstract

Organic acid production as by-products during citric acid production under low thiamine concentration byY. lipolytica was analyzed using HPLC. Main by-products were pyruvic acid and alpha-keto glutaric acid. From the analysis of byproduct formation, it was proposed that oxaloacetate synthesis via TCA cycles remained as important as synthesis from pyruvate carboxylation pathway during the citric acid production.
